Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 4 tablespoons Cold unsalted butter
  • 2 Large eggs
  • 0.5 cup Full-fat sour cream
  • 0.5 cup Grated cheddar cheese
  • 2 tablespoons Chopped fresh chives

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, baking powder, and salt.

Step 3

Cut the cold butter into small cubes and add to the flour mixture. Use a pastry cutter or two knives to cut in the butter until the mixture resembles coarse crumbs.

Step 4

In a separate bowl, whisk together the eggs and sour cream until well combined.

Step 5

Add the egg mixture to the flour mixture and stir until a sticky dough forms. Do not over mix.

Step 6

Fold in the grated cheddar cheese and chopped chives until evenly distributed throughout the dough.

Step 7

Using a large spoon or an ice cream scoop, drop mounds of dough onto the prepared baking sheet, spacing them evenly apart.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the biscuits are golden brown on top and a toothpick inserted into the center comes out clean.

Step 9

Remove from the oven and allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm, or store in an airtight container once completely cooled for up to three days. They can also be frozen for longer storage.
