Ingredients

  • 1.5 cups almond flour
  • 0.25 cup unsweetened shredded coconut
  • 0.25 cup erythritol
  • 0.25 cup unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 ounces full-fat cream cheese
  • 0.5 cup heavy cream
  • 1 teaspoon lemon zest
  • 8 medium fresh figs
  • 0.25 cup chopped almonds
  • 0.5 teaspoon ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine almond flour, shredded coconut, and erythritol.

Step 3

Melt the unsalted butter and add it to the dry ingredients. Mix until crumbly.

Step 4

Add the egg and vanilla extract to the mixture and combine until it forms a dough.

Step 5

Press the dough into a tart pan evenly, making sure to cover the bottom and sides. Use a fork to prick the bottom to prevent bubbling.

Bake the crust for 12-15 minutes until lightly golden. Remove from oven and let it cool completely.

Step 7

In another bowl, beat the cream cheese and heavy cream until smooth.

Step 8

Stir in the lemon zest and a sprinkle of erythritol if desired for added sweetness.

Step 9

Spread the cream cheese mixture evenly over the cooled crust.

Step 10

Slice the fresh figs into quarters and arrange them beautifully on top of the cream layer.

Step 11

Sprinkle chopped almonds and ground cinnamon over the figs.

Step 12

Refrigerate the tart for at least 1 hour to set before serving. Slice and enjoy!
