Ingredients

  • 3 medium Zucchini
  • 2 tablespoons Butter
  • 1 cup Heavy Cream
  • 1 cup Parmesan Cheese, grated
  • 2 cloves Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper, ground
  • 2 tablespoons Parsley, chopped (optional)

Directions

Step 1

Using a spiralizer, create zucchini noodles (zoodles) from the 3 medium zucchinis. Set them aside.

Step 2

In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, but not browned.

Step 3

Lower the heat to medium-low and pour in the heavy cream. Stir well and heat until the cream begins to simmer, about 3-5 minutes.

Step 4

Add the grated Parmesan cheese, stirring continuously until the cheese is completely melted and the sauce becomes smooth.

Step 5

Season the sauce with salt and ground black pepper. Adjust seasoning to taste if necessary.

Step 6

Add the zucchini noodles to the skillet, tossing gently in the Alfredo sauce to coat them evenly. Continue to cook for about 3-4 minutes, until the noodles are tender but still firm to the bite.

Step 7

Remove from heat and transfer to serving plates. Garnish with chopped parsley, if desired.

Step 8

Serve immediately and enjoy your low-carb Fettuccine Alfredo!
