Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 medium, diced Onion
  • 3 cloves, minced Garlic
  • 2 tablespoons Tomato paste
  • 15 ounces Crushed tomatoes
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup, grated (optional) Parmesan cheese

Directions

Step 1

Start by preparing the zucchini noodles. Using a spiralizer, slice the zucchini into fettuccine-sized strips. Set aside.

Step 2

In a large skillet, heat olive oil over medium heat.

Step 3

Add the diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent.

Step 4

Add the ground beef to the skillet. Cook, breaking it up with a spatula, until the beef is no longer pink, about 5-7 minutes.

Step 5

Stir in the tomato paste and cook for another 1-2 minutes to combine the flavors.

Step 6

Add the crushed tomatoes, dried oregano, dried basil, salt, and black pepper. Bring the mixture to a simmer and cook for 10-15 minutes, allowing the sauce to thicken.

Step 7

In a separate pan, lightly sauté the zucchini noodles over medium heat for about 2-3 minutes, or until they are just tender. Be careful not to overcook as they can become mushy.

Step 8

Serve the zucchini noodles topped with the meat sauce.

Step 9

Sprinkle grated Parmesan cheese on top if desired for added flavor.
