Ingredients

  • 200 grams Almond flour
  • 50 grams Coconut flour
  • 100 grams Erythritol
  • 2 teaspoons Baking powder
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 120 grams Unsalted butter
  • 4 large Eggs
  • 100 grams Full-fat cream cheese
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest
  • 30 grams Sliced almonds
  • 40 grams Powdered erythritol

Directions

Step 1

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, xanthan gum, and salt. Mix well and set aside.

Step 3

Melt the butter in a small saucepan over low heat, then let it cool slightly.

Step 4

In another bowl, beat the eggs until pale and frothy. Add in the melted butter, cream cheese, vanilla extract, and lemon zest, and whisk until smooth.

Step 5

Gradually add the wet mixture into the dry ingredients, stirring with a spatula until a dough forms. Knead lightly to ensure all elements are well combined.

Step 6

Divide the dough into 8 equal portions. Roll each portion into a ball, then flatten and shape into a spiral using your hands or a rolling pin.

Step 7

Place each shaped dough onto the prepared baking tray, leaving space between each piece for expansion.

Step 8

Sprinkle sliced almonds on top of each Ensaimada, pressing gently to adhere.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the Ensaimadas are golden brown and set.

Step 10

Remove from the oven and allow them to cool slightly before dusting with powdered erythritol for a sweet finish.

Step 11

Serve warm or at room temperature. Enjoy your low carb Ensaimada as a delightful treat!
