Ingredients

  • 6 large eggs
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • 2 tablespoons fresh chives
  • 1 tablespoon fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 medium radishes

Directions

Step 1

Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat.

Step 2

Once the water reaches a rolling boil, cover the pot, reduce the heat to low, and let the eggs cook for 10 minutes.

Step 3

After 10 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. This will make them easier to peel.

Step 4

Peel the eggs and chop them into bite-sized pieces. Place them in a large mixing bowl.

Step 5

Add the mayonnaise, sour cream, Dijon mustard, and white vinegar to the bowl with the chopped eggs.

Step 6

Finely chop the fresh chives and parsley, and thinly slice the radishes. Add them to the bowl with the eggs.

Step 7

Season the mixture with salt and black pepper. Gently fold all ingredients together using a spatula until well combined.

Step 8

Taste and adjust the seasoning if necessary.

Step 9

Chill the egg salad in the refrigerator for at least 30 minutes to allow the flavors to meld.

Step 10

Serve the low carb eiersalat chilled, either on its own, with low-carb crackers, or in lettuce wraps.
