  • 1 cup Baby spinach
  • 0.5 cup Cherry tomatoes, halved
  • 0.5 medium Avocado, sliced
  • 0.5 cup Low-fat cheese or cooked chicken strips (optional)

Directions

Step 1

In a mixing bowl, lightly whisk the egg whites with salt and pepper until well combined.

Heat a non-stick skillet over medium heat and add olive oil or spray with non-stick cooking spray to lightly coat the surface.
