Ingredients

  • 6 large Egg whites
  • 1 tablespoon Olive oil
  • 1 cup Fresh spinach leaves
  • 1 medium Tomato, sliced
  • 0.5 cup Low-moisture part-skim mozzarella cheese, shredded
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Paprika

Directions

Step 1

Preheat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

In a medium bowl, whisk together the egg whites with salt, black pepper, and paprika until well combined.

Step 3

Pour the egg whites into the hot skillet, allowing them to spread evenly. Cook for 3-4 minutes until the edges set.

Step 4

Carefully flip the egg whites over and cook for another 2 minutes until fully set and slightly golden.

Step 5

Remove the egg whites from the skillet and cut them in half to create two portions.

Step 6

In the same skillet, add the spinach leaves and sauté for 1-2 minutes until wilted.

Step 7

Assemble each sandwich by layering half of the sautéed spinach, sliced tomato, and 1/4 cup of shredded mozzarella cheese on each portion of the egg whites.

Step 8

Place the sandwiches back into the skillet, cover with a lid, and reduce the heat to low. Cook for an additional 3-4 minutes, or until the cheese is melted.

Step 9

Remove from heat and serve the egg white grill immediately while the cheese is still gooey and warm.
