Ingredients

  • 4 large Eggs
  • 2 tablespoons Cream cheese
  • 0.25 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 patties Sausage patty
  • 2 slices Cheddar cheese slice
  • 2 teaspoons Butter
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

Step 2

Separate two of the eggs, placing the whites in a clean mixing bowl and the yolks in a small bowl. Set the yolks aside.

Step 3

Add the cream cheese to the egg yolks and mix well until smooth. Mix in the baking powder, salt, and pepper.

Step 4

With a hand mixer or stand mixer, beat the egg whites on high until stiff peaks form.

Gently fold the yolk mixture into the egg whites, taking care not to deflate them.

Spoon the mixture onto the prepared baking sheet, forming four equal rounds. These will be the cloud bread ‘buns’.

Bake in the preheated oven for 15-18 minutes, or until golden and set. Remove from oven and let cool slightly.

While the cloud bread is baking, heat a non-stick skillet over medium heat and add the sausage patties. Cook until well browned on both sides and completely cooked through, about 5 minutes per side. Remove and set aside.

In the same skillet or a separate one, lightly grease with non-stick cooking spray. Crack the remaining two eggs into the skillet, keeping the yolks intact. Cook until the whites are set and the yolks are at your desired doneness, about 3-4 minutes for slightly runny yolks.

To assemble, place one piece of cloud bread on a plate, top with a sausage patty, followed by a cooked egg, a slice of cheddar cheese, and cover with another cloud bread piece. Repeat for the second sandwich.
