Ingredients

  • 2 packets Shirataki noodles
  • 2 tablespoons Olive oil
  • 1 pound Boneless chicken breast, sliced thinly
  • 3 cloves Garlic, minced
  • 1 cup Broccoli florets
  • 1 medium Red bell pepper, sliced
  • 1 medium Carrot, julienned
  • 3 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, sliced
  • 1 tablespoon Sesame seeds

Directions

Step 1

Rinse the shirataki noodles under cold water for 2 minutes, drain, and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Step 3

Add the sliced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of olive oil.

Step 5

Add the minced garlic, and cook for 30 seconds until fragrant.

Step 6

Stir in the broccoli, red bell pepper, and carrot, and stir-fry for about 5 minutes until the vegetables are tender-crisp.

Step 7

Return the cooked chicken to the skillet and add the rinsed shirataki noodles.

Step 8

Pour the soy sauce and sesame oil over the mixture and toss everything together until the noodles are heated through.

Step 9

Serve the stir-fry noodles hot, garnished with sliced green onions and sesame seeds.
