Ingredients

  • 3 tablespoons Butter
  • 0.5 cup Onion
  • 2 cloves Garlic
  • 1.5 cups Beef stock
  • 2 cups Cooked shredded beef
  • 2 ounces Cream cheese
  • 1 teaspoon Thyme
  • 0.25 teaspoon Nutmeg
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Almond flour
  • 0.5 cup Coconut flour
  • 3 large Eggs
  • 2 cups Pork rinds
  • 2 cups Oil for frying

Directions

Step 1

In a large skillet, melt butter over medium heat. Add finely chopped onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.

Step 2

Stir in beef stock, shredded beef, cream cheese, thyme, nutmeg, salt, and black pepper. Simmer on low heat until the mixture thickens slightly and is well combined, about 5-7 minutes. Remove from heat and let the mixture cool.

Step 3

In a shallow bowl, combine almond flour and coconut flour. In another bowl, beat the eggs. Place crushed pork rinds in a third bowl.

Step 4

Once the beef mixture is cool, shape it into small logs, about the size of your thumb.

Step 5

Working one at a time, roll each beef log in the flour mix, dip into the beaten eggs, then coat with crushed pork rinds. Press lightly to ensure the coating sticks well.

Step 6

Heat oil in a deep pan over medium-high heat until it reaches 350°F (180°C).

Step 7

Fry the croquettes in batches until golden brown and crisp, about 3-4 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate.

Step 8

Serve warm with your favorite dipping sauce, or as a savory snack on its own.
