Ingredients

  • 200 grams almond flour
  • 30 grams coconut flour
  • 100 grams unsalted butter, melted
  • 60 grams erythritol or low-carb sweetener
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon, ground
  • 0.5 teaspoon salt
  • 600 grams Granny Smith apples, peeled and sliced
  • 2 tablespoons lemon juice
  • 30 grams almond slices

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a 9-inch springform pan and set it aside.

Step 2

In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, ground cinnamon, and salt.

Step 3

Add the melted butter, vanilla extract, and 1 egg to the dry ingredients. Mix until a dough forms. It should be a bit crumbly but hold together when pressed.

Step 4

Press 3/4 of the dough evenly into the bottom and slightly up the sides of the prepared springform pan to form the crust.

Step 5

In another bowl, toss the sliced apples with lemon juice and a pinch of cinnamon.

Step 6

Arrange the apple slices tightly in the pan over the crust.

Step 7

Add the remaining 2 eggs to the leftover dough and mix to form a smoother batter. This will be the topping.

Step 8

Spread the batter over the apples evenly.

Step 9

Sprinkle almond slices over the top of the batter for added crunch.

Step 10

Bake in the preheated oven for 50 minutes, or until the crust is golden brown and the apples are tender.

Step 11

Remove the pan from the oven and let cool for at least 15 minutes before removing the springform. Slice and serve warm or at room temperature.
