Ingredients

  • 4 sheets Nori sheets
  • 200 grams Cauliflower rice
  • 1 tablespoon Rice vinegar
  • 0.5 teaspoon Salt
  • 1 large Avocado
  • 0.5 medium Cucumber
  • 8 pieces Imitation crab sticks
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Sriracha sauce
  • 1 tablespoon Toasted sesame seeds
  • 2 tablespoons Eel sauce (optional)

Directions

Step 1

Begin by preparing the cauliflower rice. Add the cauliflower rice to a non-stick pan and cook over medium heat for 5-7 minutes, stirring frequently, until softened and most of the moisture is evaporated.

Step 2

Remove the cauliflower rice from heat and mix in the rice vinegar and salt. Set aside to cool to room temperature.

Step 3

Peel and slice the cucumber into thin, long strips. Halve the avocado, remove the pit, and slice into thin wedges. Set both aside.

Step 4

In a small bowl, mix the mayonnaise and sriracha sauce until well combined. This will be used as a spicy mayo topping.

Step 5

Lay a sheet of nori on a bamboo sushi mat, shiny side down. Evenly spread a thin layer of the cooled cauliflower rice over the nori, leaving about 2 cm clear on the top edge.

Drizzle the spicy mayo on each slice of the roll and sprinkle with toasted sesame seeds.

Step 11

Finish with eel sauce, if using, and serve immediately.
