Ingredients

  • 12 pieces large shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 120 grams cream cheese, softened
  • 50 grams Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 60 grams almond flour
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Using a small paring knife, carefully butterfly each shrimp by cutting along the outer curve, making sure not to cut all the way through.

Step 3

In a medium bowl, mix together the cream cheese, Parmesan cheese, minced garlic, chopped parsley, lemon zest, salt, and pepper until well combined.

Step 4

Stuff each butterflied shrimp with a tablespoon of the cream cheese mixture, pressing gently to secure it.

Step 5

In a shallow dish, mix the almond flour and paprika. Roll each shrimp in the almond flour mixture to lightly coat.

Step 6

Heat the olive oil in a sauté pan over medium heat. Add the stuffed shrimp and cook for 1-2 minutes on each side or until golden. Do this in batches if necessary.

Step 7

Transfer the shrimp to the prepared baking sheet and bake in the preheated oven for 10 minutes, until the shrimp are cooked through.

Step 8

Serve hot, garnished with additional chopped parsley if desired.
