Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Whole psyllium husk
  • 3 large Eggs
  • 1 tablespoon Apple cider vinegar
  • 1 cup Boiling water
  • 2 tablespoons Olive oil
  • 0.5 pound Ground beef
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Curry powder
  • 2 tablespoons Tomato paste
  • 0.5 cup Chicken broth
  • 0.25 cup Frozen peas
  • 1 tablespoon Butter

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine almond flour, coconut flour, baking powder, salt, and psyllium husk, whisking thoroughly.

Step 3

Beat the eggs in a separate bowl, then add apple cider vinegar and 2 tablespoons of olive oil. Pour this mixture into the dry ingredients and stir until well combined.

Step 4

Pour boiling water into the mixture and quickly stir until a dough forms. Let it rest for a few minutes while preparing the filling.

Step 5

In a skillet over medium heat, melt butter and sauté diced onions until translucent. Add minced garlic and cook for another minute.

Step 6

Add ground beef to the skillet, breaking it apart with a spatula, and cook until browned. Drain any excess fat.

Step 7

Stir in curry powder, tomato paste, and chicken broth, and let the mixture simmer for 10 minutes or until thickened. Add frozen peas and cook for another 2 minutes. Remove from heat and let cool slightly.

Step 8

Divide the dough into 6 equal parts. Roll each piece into a ball, then flatten it between your palms to form a circle.

Step 9

Place a spoonful of the curry beef filling in the center of each dough circle, then fold the edges over, pinching them to seal the filling inside.

Step 10

Place the buns seam side down on the prepared baking sheet. Bake in the preheated oven for 30-35 minutes until golden brown and firm.

Step 11

Allow the curry buns to cool for a few minutes before serving. Enjoy warm!
