Ingredients

  • 1 cup Green lentils
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoons Curry powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Ground coriander
  • 1 14 oz can Canned diced tomatoes
  • 1 cup Coconut milk
  • 2 cups Spinach, fresh
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Cilantro, chopped (for garnish)

Directions

Step 1

Rinse the green lentils thoroughly under cold water and set them aside.

Step 2

In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

Step 3

Add the minced garlic and ginger to the pot, stirring for about 1 minute until fragrant.

Step 4

Add curry powder, ground cumin, and ground coriander, and cook for another minute to toast the spices lightly.

Stir in the rinsed lentils, canned diced tomatoes (with their juice), and coconut milk. Bring the mix to a boil.
