Ingredients

  • 150 grams Sesame seeds
  • 50 grams Unsweetened shredded coconut
  • 50 grams Almonds, sliced
  • 50 grams Pecan nuts, chopped
  • 60 grams Butter
  • 50 grams Erythritol or preferred low-carb sweetener
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 2 tablespoons Water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Step 2

In a large skillet over medium heat, toast the sesame seeds until golden and fragrant, stirring frequently, about 5-7 minutes. Transfer to a large mixing bowl.

Step 3

To the same pan, lightly toast the shredded coconut, almonds, and pecans until slightly golden, about 3-5 minutes. Transfer to the bowl with the sesame seeds.

Step 4

In a small saucepan, melt the butter over low heat. Add the erythritol and stir until dissolved. Then add the vanilla extract, salt, and water, mixing until well combined.

Pour the wet mixture over the dry ingredients and mix thoroughly to ensure everything is well coated.

Transfer the mixture to the prepared baking pan, spreading evenly. Use a spatula or the bottom of a glass to firmly press the mixture into the pan.
