Ingredients

  • 100 g Low-carb oats
  • 100 g Almond flour
  • 100 g Butter
  • 50 g Erythritol sweetener
  • 1 large Egg
  • 1 tsp Vanilla extract
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 50 g Chopped almonds

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the low-carb oats, almond flour, erythritol sweetener, baking powder, and salt. Mix well to ensure even distribution of ingredients.

Step 3

In a separate bowl, cream together the butter and erythritol sweetener until light and fluffy, using an electric mixer or a whisk.

Step 4

Add the egg and vanilla extract to the butter mixture and beat until well combined.

Step 5

Gradually add the dry ingredients to the butter mixture, mixing until a dough begins to form.

Step 6

Fold in the chopped almonds using a spatula, ensuring they're evenly distributed throughout the dough.

Step 7

Scoop tablespoon-sized amounts of dough and roll into balls. Place them on the prepared baking sheet, evenly spaced.

Step 8

Use the back of a spoon or your fingers to gently flatten each ball into a biscuit shape.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.

Step 10

Remove from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Store the biscuits in an airtight container at room temperature for up to a week.
