Ingredients

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 0.25 cup water
  • 4 low-carb tortillas
  • 1 cup cheddar cheese, shredded
  • 0.5 cup sour cream
  • 1 cup lettuce, shredded
  • 1 tomato, diced
  • 1 cup low-carb crunch chips
  • 1 tablespoon olive oil

Directions

Step 1

In a large skillet over medium heat, add the ground beef. Cook and crumble the beef until no longer pink, about 5-7 minutes.

Step 2

Drain excess fat from the skillet, then return it to the stove. Add taco seasoning and 1/4 cup of water. Stir to combine and let the mixture simmer for 3-5 minutes, until thickened.

Step 3

Lay out the low-carb tortillas on a flat surface. In the center of each tortilla, layer evenly the cooked beef mixture, cheddar cheese, and low-carb crunch chips.

Step 4

On top of the chips, add a dollop of sour cream, followed by the shredded lettuce and diced tomatoes.
