Ingredients

  • 1.5 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 6 tablespoons Unsalted butter
  • 2 ounces Cream cheese
  • 1 large Egg
  • 1 tablespoon Cold water
  • 1 tablespoon Stevia granules
  • 1 cup Fresh strawberries, sliced
  • 1 cup Heavy cream
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, combine almond flour, coconut flour, baking powder, and salt. Set aside.

Step 3

In a microwave-safe bowl, melt the butter and cream cheese together, heating in 30-second intervals and stirring in between until smooth.

Step 4

Add the melted butter and cream cheese mixture to the flour mixture. Mix well.

Step 5

In a small bowl, beat the egg and add it along with the cold water to the dough, mixing until a dough starts to form.

Step 6

Place the dough between two pieces of parchment paper and roll it out into a rectangular shape about 1/4 inch thick.

Step 7

Cut the dough into 8 triangles. Starting with the wide end of the triangle, roll each piece into a croissant shape, gently placing each onto the prepared baking sheet.

Step 8

Sprinkle the tops with stevia granules for extra sweetness.

Step 9

Bake in the preheated oven for 20-25 minutes or until the croissants are golden brown.

Step 10

While the croissants are baking, prepare the whipped cream. In a mixing bowl, combine the heavy cream and vanilla extract, then whisk with a hand mixer until soft peaks form.

Step 11

Once the croissants are done, let them cool for a few minutes.

Step 12

Serve the croissants with a generous topping of sliced strawberries and a dollop of whipped cream. Enjoy!
