Ingredients

  • 1 cup Almond flour
  • 0.25 cup Coconut flour
  • 1 tablespoon Psyllium husk powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 2 tablespoons Cream cheese
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Low-carb sweetener

Directions

Step 1

Preheat your waffle iron according to manufacturer instructions.

Step 2

In a microwave-safe bowl, combine butter and cream cheese. Microwave on medium heat in 30-second intervals, stirring in between, until fully melted and combined.

Step 3

In a separate large bowl, whisk together almond flour, coconut flour, psyllium husk powder, baking powder, and salt.

Step 4

Add the melted butter and cream cheese mixture to the dry ingredients, mixing until a thick dough forms.

Step 5

In another bowl, beat the eggs with the vanilla extract and low-carb sweetener until frothy.

Step 6

Incorporate the egg mixture into the dough, mixing until fully combined. The resulting dough should be pliable.

Step 7

Divide the dough into 4 equal portions. Roll each piece lightly into a ball and then flatten into a disk, about 1/4 inch thick.

Step 8

Place one disk of dough into the preheated waffle iron and cook until golden brown and firm, approximately 4-5 minutes.

Step 9

Remove the croffle from the iron and set aside. Repeat with the remaining portions of dough.

Step 10

Serve warm, topped with sugar-free syrup, fresh berries, or your favorite low-carb topping.
