Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Erythritol
  • 2 tablespoons Butter, melted
  • 3 large Egg whites
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly spray with non-stick cooking spray.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, and erythritol. Mix well until the dry ingredients are thoroughly blended.

Step 3

In a separate bowl, whisk the egg whites with a hand whisk or electric mixer until they form soft peaks.

Step 4

Gently fold the egg whites into the dry mixture, being careful not to deflate the whites. Add the melted butter, vanilla extract, and salt. Stir until the mixture is smooth and well combined.

Step 5

Spoon one tablespoon of the batter onto the prepared baking sheet and spread it into a thin, even circle using the back of the spoon. Aim for a 3-inch diameter.

Step 6

Repeat the process with the remaining batter, ensuring each circle is well-spaced to allow for spreading during baking.

Step 7

Bake in the preheated oven for about 10-12 minutes or until the edges of the wafers are golden brown.

Step 8

Once baked, remove the wafers from the oven, and working quickly, roll each one around a thin stick or the handle of a wooden spoon to form a roll. Be cautious as the wafers will be hot and will harden quickly as they cool.

Step 9

Allow the wafer rolls to cool completely on a wire rack, where they will become crispy.

Step 10

Serve the wafer rolls as is, or fill them with your choice of low-carb cream or mousse for an added treat.
