Ingredients

  • 1 head Cauliflower
  • 1 large Egg
  • 0.5 cup Almond flour
  • 0.5 cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and process them in a food processor until they resemble rice grains.

Step 3

Transfer the cauliflower 'rice' to a microwave-safe bowl and microwave on high for 5 minutes.

Step 4

Let the cauliflower cool for a few minutes, then transfer it to a clean kitchen towel. Squeeze out as much moisture as possible from the cauliflower.
