Ingredients

  • 1 cup Almond flour
  • 0.5 cup Old-fashioned oats
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.25 cup Unsalted butter
  • 0.25 cup Swerve granulated sweetener
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together almond flour, oats, baking powder, and salt until well combined.

Step 3

In a separate large bowl, cream the butter and Swerve sweetener together using an electric mixer until light and fluffy.

Step 4

Add the egg and vanilla extract to the butter mixture and mix until well incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Stir in the chopped nuts if using.

Step 6

Using a tablespoon or cookie scoop, portion out the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Gently flatten each dough ball with the back of a spoon or your fingers to form biscuit shapes.

Step 8

Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown and the biscuits are firm to the touch.

Step 9

Remove from the oven and let the biscuits cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Store the biscuits in an airtight container at room temperature for up to a week.
