Ingredients

  • 1 medium head Cauliflower
  • 1 medium Zucchini
  • 1 large Egg
  • 1 cup Grated Parmesan cheese
  • 0.5 cup Almond flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil

Directions

Step 1

Cut the cauliflower into florets and place them into a food processor. Pulse until it reaches a rice-like consistency.

Step 2

Place the processed cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.

Step 3

Grate the zucchini using a box grater. Place the grated zucchini in a separate clean kitchen towel and squeeze out any excess water.

Step 4

In a large mixing bowl, combine the dry cauliflower, zucchini, egg, grated Parmesan cheese, almond flour, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are well combined.
