Ingredients

  • 2 medium Zucchini
  • 1 small head Cauliflower
  • 2 large Eggs
  • 0.5 cup Almond flour
  • 0.25 cup Parmesan cheese, grated
  • 3 stalks Green onions, chopped
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Cooking oil (e.g., avocado oil)

Directions

Step 1

Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out as much moisture as possible and set aside.

Step 2

Cut the cauliflower into small florets and pulse in a food processor until it resembles rice. Transfer to a mixing bowl.

Step 3

Add the grated zucchini, eggs, almond flour, Parmesan cheese, chopped green onions, garlic powder, salt, and black pepper to the bowl with the cauliflower. Mix until well combined.

Step 4

Heat the cooking oil in a large non-stick pan over medium-high heat.

Step 5

Scoop about 3 tablespoons of the vegetable mixture and form into a patty with your hands. Place in the hot oil and press down slightly to flatten.

Step 6

Fry the fritters for about 3-4 minutes on each side, or until golden brown and crispy.

Step 7

Remove from the pan and drain on paper towels to remove excess oil.

Step 8

Repeat the frying process with the remaining mixture, adding more oil to the pan as needed.

Step 9

Serve the fritters warm as a side dish or appetizer.
