Ingredients

  • 1 cup almond flour
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons cream cheese
  • 1 piece medium zucchini, grated and moisture squeezed out
  • 1 piece large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons olive oil

Directions

Step 1

In a medium-sized mixing bowl, combine almond flour, shredded mozzarella cheese, grated Parmesan cheese, and cream cheese. Mix well until incorporated.

Step 2

Add the grated zucchini to the mixture. Make sure the zucchini has been squeezed well to remove excess moisture.

Step 3

Beat the egg and add it to the mixture, followed by the garlic powder, onion powder, dried Italian herbs, salt, and black pepper.

Step 4

Stir all the ingredients until a sticky but formable dough is achieved.

Step 5

Using your hands, shape the mixture into small balls, around 1.5 inches in diameter.

Step 6

Heat olive oil in a large skillet over medium heat.

Step 7

Once the oil is hot, add the balls to the skillet, being careful not to overcrowd them.

Step 8

Fry the balls for about 3-4 minutes on each side, or until they are golden brown and crispy.

Step 9

Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Step 10

Serve hot and enjoy! They pair well with a low-carb dipping sauce or serve as a side.
