Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 medium, diced onion
  • 3 minced garlic cloves
  • 4 cups chicken or vegetable broth
  • 0.5 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon butter

Directions

Step 1

Wash and trim the ends of the zucchinis, and then cut them into 1-inch pieces.

Step 2

In a large pot, heat olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.

Step 3

Add minced garlic to the pot and sauté for an additional 1 minute until fragrant.

Step 4

Introduce the chopped zucchini to the pot, along with salt, black pepper, and fresh thyme leaves. Stir everything to coat the zucchini in the oil and seasonings.

Step 5

Pour in the chicken or vegetable broth and bring the soup to a boil. Then, reduce the heat to a simmer and cook for about 15 minutes, or until the zucchini is very tender.

Step 6

Remove the pot from heat. Using an immersion blender, blend the soup until smooth. Alternatively, let the soup cool slightly and blend in batches using a countertop blender.

Step 7

Once blended, return the soup to low heat and stir in the heavy cream and butter until well combined and buttery smooth.

Step 8

Taste, and adjust seasoning if necessary. Serve hot, garnished with extra thyme leaves or a swirl of cream if desired.
