Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, grated
  • 3 stalks Scallions, sliced
  • 2 large Eggs
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 1 cup Cooked crab meat
  • 1 cup Frozen peas and carrots, thawed
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 optional Lime wedges, for serving

Directions

Step 1

Cut the cauliflower into florets and pulse them in a food processor until they reach a rice-sized consistency.

Step 2

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the minced garlic and grated ginger, sauté for 1 minute until fragrant.

Step 3

Add the cauliflower rice to the skillet and sauté for about 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy. Set aside in a separate bowl.

Step 4

In the same skillet, add the remaining tablespoon of olive oil. Pour in the beaten eggs and scramble until fully cooked. Break the eggs into small pieces using a spatula.

Step 5

Return the cauliflower rice to the skillet and add the sliced scallions, soy sauce, sesame oil, crab meat, and thawed peas and carrots. Stir well to combine all ingredients.

Step 6

Season the mixture with salt and black pepper, adjusting to taste. Cook for an additional 3-4 minutes until everything is heated through and well mixed.
