Ingredients

  • 500 grams cooked chicken breast
  • 150 grams mayonnaise (sugar-free)
  • 100 grams Greek yogurt
  • 1 tablespoon curry powder
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground cumin
  • 1 tablespoon lemon juice
  • 30 grams almond flakes
  • 2 tablespoons chopped fresh coriander
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Begin by preparing the cooked chicken breast. If it is not already cooked, season the chicken with salt and pepper, and bake at 180°C (356°F) for 20-25 minutes until fully cooked. Let it cool and then chop into bite-sized pieces.

Step 2

In a large mixing bowl, add the mayonnaise, Greek yogurt, curry powder, ground turmeric, ground cumin, lemon juice, salt, and black pepper. Stir well until all the ingredients are smoothly combined to create the dressing.

Step 3

Add in the chopped, cooked chicken pieces to the bowl with the dressing. Toss the chicken until it is thoroughly coated in the spiced dressing.

Lightly toast the almond flakes in a dry frying pan over medium heat for about 2-3 minutes, stirring often until they are golden brown. Set aside to cool.
