Ingredients

  • 1 cup almond flour
  • 1 cup canned sweetcorn, drained
  • 2 egg
  • 2 tablespoons green onions, finely chopped
  • 1 cup cheddar cheese, shredded
  • 0.25 cup unsweetened almond milk
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons olive oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the almond flour, eggs, unsweetened almond milk, baking powder, salt, and black pepper. Mix well until the batter is smooth.

Step 2

Add the drained sweetcorn, chopped green onions, and shredded cheddar cheese to the batter. Stir until all ingredients are evenly distributed.

Step 3

Heat olive oil in a large non-stick frying pan over medium heat.

Step 4

Scoop approximately 1/4 cup of the fritter batter into the hot pan for each fritter. Flatten slightly with a spatula.

Step 5

Cook the fritters for about 3-4 minutes on each side or until they turn golden brown and are cooked through.

Step 6

Remove the fritters from the pan and place them on a plate lined with paper towel to drain any excess oil.

Step 7

Repeat the cooking process with the remaining batter, adding more olive oil as needed.

Step 8

Serve warm as is, or with a dollop of sour cream or your favorite low-carb sauce for dipping.
