Ingredients

  • 2 ears fresh sweet corn
  • 2 cups cherry tomatoes
  • 0.5 medium red onion
  • 0.5 cup fresh basil leaves
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Shuck the ears of corn and remove all the silk. Rinse the corn under cold water.

Step 2

Bring a large pot of water to a boil. Add the ears of corn and cook for about 3 minutes or just until tender. Remove them and let them cool slightly.

Step 3

Once cooled, stand each ear of corn on end in a large bowl. Using a sharp knife, carefully slice downward to remove the kernels. Transfer the kernels to a large mixing bowl.

Step 4

Halve the cherry tomatoes and add them to the mixing bowl with the corn.

Step 5

Finely dice the red onion and add to the corn and tomato mixture.

Chop the basil leaves and add them to the salad.
