Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 Celery stalks, sliced
  • 1 large Carrot, diced
  • 6 cups Chicken broth
  • 2 cups Cooked chicken, shredded
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Fresh thyme leaves
  • 1 cup Almond flour
  • 0.5 cup Parmesan cheese, grated
  • 1 large Egg
  • 1 teaspoon Baking powder
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent, about 5 minutes.

Step 2

Add the sliced celery and diced carrot to the pot. Cook for an additional 5 minutes, stirring occasionally.

Step 3

Pour in the chicken broth and add the shredded chicken, bay leaf, salt, black pepper, and thyme leaves. Bring the mixture to a boil, then lower the heat and simmer for 15 minutes to develop flavors.

Step 4

While the soup simmers, make the dumplings. In a mixing bowl, combine almond flour, Parmesan cheese, egg, baking powder, and parsley. Mix until a dough forms.

Step 5

Form small dumplings about 1 inch in diameter with your hands and set aside.

Step 6

Once the soup has simmered for 15 minutes, gently drop the dumplings into the soup. Cover the pot and let cook for another 10 minutes, or until the dumplings are cooked through and tender.

Step 7

Taste the soup and adjust seasoning as needed. Serve hot, garnished with extra fresh parsley if desired.
