Ingredients

  • 2 cups Almond flour
  • 0.25 cup Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 3 large Eggs
  • 0.5 cup Unsalted butter, melted
  • 0.5 cup Granulated erythritol
  • 2 tablespoons Instant coffee powder
  • 1 teaspoon Vanilla extract
  • 0.5 cup Heavy cream
  • 2 tablespoons Water
  • 4 ounces Cream cheese, room temperature

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium mixing bowl, whisk together almond flour, coconut flour, baking powder, and salt.

Step 3

In a large bowl, beat the eggs until light and frothy. Add the melted butter, granulated erythritol, and vanilla extract. Mix until well combined.

Add in the dry ingredients and mix until a dough forms. It will be slightly sticky.
