Ingredients

  • 500 grams fresh cod fillets
  • 100 grams almond flour
  • 2 pieces large egg
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 for serving lemon wedges

Directions

Step 1

Start by cutting the fresh cod fillets into small pieces. Place them in a food processor and pulse until roughly chopped.

Step 2

In a large mixing bowl, combine the processed cod, almond flour, eggs, baking powder, garlic powder, onion powder, chopped parsley, salt, and black pepper. Mix until all ingredients are well-incorporated.

Step 3

Heat the olive oil in a large non-stick skillet over medium heat.

Step 4

Scoop about 2 tablespoons of the cod mixture and shape it into a patty. Repeat with the remaining mixture.

Step 5

Place the patties gently into the hot skillet, making sure not to overcrowd the pan. Cook for about 3-4 minutes on each side or until the fritters are golden brown and cooked through.

Step 6

Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 7

Serve the cod fritters warm with lemon wedges on the side for squeezing over the fritters.
