Ingredients

  • 400 ml Full-fat coconut milk
  • 200 ml Unsweetened almond milk
  • 50 g Powdered erythritol
  • 1 tsp Vanilla extract
  • 2.5 tsp Unflavored gelatin
  • 3 tbsp Cold water
  • 1 pinch Pinch of salt
  • 100 g Fresh berries for garnish (optional)

Directions

Step 1

In a small bowl, sprinkle the gelatin over the cold water and let it stand for about 5 minutes to bloom.

Step 2

In a medium saucepan, combine the coconut milk, almond milk, erythritol, and a pinch of salt. Heat over medium heat, stirring occasionally, until the mixture is warm and the sweetener is fully dissolved. Do not let it boil.

Step 3

Once the mixture is warm, add the bloomed gelatin and stir until completely dissolved.

Step 4

Remove the saucepan from heat and stir in the vanilla extract.

Step 5

Pour the mixture evenly into four ramekins or serving glasses.

Allow the panna cotta to cool at room temperature, then transfer to the refrigerator. Let them set for at least 4 hours, or until firm.
