Ingredients

  • 400 ml Coconut milk (full-fat, unsweetened)
  • 200 ml Unsweetened almond milk
  • 10 g Gelatin powder
  • 30 g Erythritol or low-carb sweetener
  • 1 tsp Vanilla extract
  • 50 ml Water

Directions

Step 1

In a small bowl, combine the gelatin powder with 50 ml of water to bloom. Let it sit for about 5 minutes until the gelatin has absorbed the water and become gelatinous.

Step 2

In a medium saucepan, combine the coconut milk, almond milk, and erythritol over medium heat. Stir occasionally, ensuring the sweetener dissolves completely but do not bring the mixture to a boil.

Step 3

Once the mixture is hot, add the bloomed gelatin and continue to stir until the gelatin has completely dissolved.

Step 4

Remove the saucepan from heat and stir in the vanilla extract.

Step 5

Strain the mixture through a fine-mesh sieve into a bowl or measuring jug to remove any undissolved gelatin lumps.

Pour the mixture into four serving molds or cups evenly.

Allow the coconut jelly to cool slightly before covering them with plastic wrap. Refrigerate for at least 2 to 3 hours or until set.
