Ingredients

  • 400 ml Coconut milk (full-fat, canned)
  • 240 ml Heavy cream
  • 75 g Erythritol or preferred low-carb sweetener
  • 1 tsp Coconut extract
  • 1 tsp Vanilla extract
  • 0.5 tsp Salt
  • 30 g Unsweetened shredded coconut

Directions

Step 1

In a medium saucepan, combine coconut milk, heavy cream, and erythritol over medium heat.

Step 2

Stir the mixture constantly until the erythritol completely dissolves, ensuring the mixture doesn't come to a boil.

Step 3

Remove the saucepan from the heat and add coconut extract, vanilla extract, and salt. Stir until well combined.

Step 4

Let the mixture cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.

Step 5

Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, usually around 20-25 minutes.

Step 6

During the last 5 minutes of churning, add the unsweetened shredded coconut.

Step 7

Transfer the gelato to an airtight container and freeze for at least 1 hour for a more firm consistency before serving.

Step 8

Before serving, let the gelato sit at room temperature for a few minutes to soften slightly for easy scooping.
