Ingredients

  • 2 cups Almond flour
  • 1 cup Walnuts
  • 0.5 cup Butter, unsalted
  • 0.5 cup Erythritol or other low-carb sweetener
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a dry skillet over medium heat, toast the walnuts for about 5 minutes, stirring frequently, until they are fragrant. Let them cool before coarsely chopping.

Step 3

In a large mixing bowl, cream together the butter and erythritol until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture, mixing well until fully incorporated.

Step 5

In another bowl, combine the almond flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Fold in the chopped walnuts until evenly distributed throughout the dough.

Step 7

Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Gently flatten the cookies with the back of a spoon or your fingers to form a cookie shape.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Step 10

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
