Ingredients

  • 1 medium, grated Zucchini
  • 1 medium, grated Carrot
  • 1 cup, finely chopped Broccoli florets
  • 3 stalks, finely chopped Green onion
  • 2 large Eggs
  • 1 cup Almond flour
  • 0.5 cup, grated Parmesan cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 3 tablespoons Olive oil

Directions

Step 1

Place the grated zucchini in a clean kitchen towel or paper towels. Squeeze tightly to remove as much moisture as possible.

Step 2

In a large bowl, combine squeezed zucchini, grated carrot, chopped broccoli, and green onion.

Step 3

In a separate small bowl, whisk the eggs and then add to the vegetable mixture.

Step 4

Add almond flour, Parmesan cheese, salt, pepper, and garlic powder to the vegetable and egg mixture, and mix well until fully combined.

Heat olive oil in a large non-stick frying pan over medium heat.
