Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Coconut flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 0.75 cup Erythritol sweetener (or preferred low-carb sweetener)
  • 1 large Egg
  • 1 tablespoon Vanilla extract
  • 2 tablespoons Almond milk (unsweetened)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium-sized bowl, mix together the almond flour, coconut flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, using an electric mixer, beat the unsalted butter and erythritol sweetener until light and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture, beating until well combined. Scrape down the sides of the bowl as needed.

Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
