Ingredients

  • 4 cups cauliflower rice
  • 2 cans canned tuna, drained
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 2 cups sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • 1 stalk celery, finely chopped
  • 0.5 medium onion, finely chopped
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, melt the butter over medium heat. Add the chopped celery and onion, and sauté until the vegetables are softened, about 5 minutes.

Step 3

Add the cauliflower rice to the skillet and cook for another 5 minutes, stirring occasionally, until the cauliflower is tender.

Step 4

Stir in the heavy cream, cream cheese, garlic powder, thyme, salt, and black pepper. Cook until the cream cheese is fully melted and the mixture is smooth and creamy.

Step 5

Remove the skillet from heat and gently fold in the drained tuna.

Step 6

Transfer the mixture to a 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.

Step 7

Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden brown.

Step 8

Remove the casserole from the oven and allow it to cool for a few minutes before serving.

Step 9

Garnish with chopped parsley before serving for an added fresh touch.
