Ingredients

  • 4 medium bell peppers
  • 2 tablespoons extra virgin olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 1 pound ground turkey
  • 2 cups cauliflower rice
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Slice the tops off the bell peppers and remove the seeds and membranes. Set the hollowed-out peppers aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

Add the ground turkey to the skillet and cook until browned and fully cooked, breaking it apart with a spatula, approximately 7-8 minutes.
