Ingredients

  • 2 pounds Beef chuck, cubed
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrot, sliced
  • 2 Celery stalks, sliced
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 2 Bay leaves
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Green beans, trimmed and cut
  • 8 ounces Mushrooms, sliced
  • 2 tablespoons Parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove and set aside on a plate.

Step 2

In the same pot, add the onions and garlic, sauté for 2-3 minutes until the onions become translucent and fragrant.

Step 3

Add the sliced carrots and celery to the pot. Cook for another 3 minutes, stirring occasionally to combine all the flavors.

Return the browned beef to the pot. Pour in the beef broth and add the tomato paste, stirring well to dissolve the paste.

Add the bay leaves, thyme, salt, and pepper. Stir to combine and bring the mixture to a gentle boil.
