Ingredients

  • 500 grams beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 medium carrot, chopped
  • 100 grams mushrooms, sliced
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 2 tablespoons low carb flour mix
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme, dried
  • 1 prepared sheet low carb pastry crust
  • 1 large egg, beaten

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove the beef and set aside.

Step 2

In the same pot, add the remaining tablespoon of olive oil. Add the onion, garlic, celery, and carrot. Sauté for about 5 minutes until the vegetables are softened.

Step 3

Add the mushrooms and cook for another 3 minutes. Stir in the tomato paste and cook for 1 minute, then sprinkle the low carb flour mix over the vegetables and stir to combine.

Step 4

Pour in the beef broth slowly, stirring constantly to prevent lumps. Return the beef to the pot, then add salt, pepper, and thyme. Bring to a boil, then reduce the heat to low and simmer for 1.5 hours, or until the beef is tender.

Preheat the oven to 400°F (200°C). Transfer the beef mixture to a pie dish.
