  • 1 teaspoon Xanthan gum

  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.25 cup Warm water
  • 2 tablespoons Avocado oil
  • 2 tablespoons Stevia or your preferred low carb sweetener
  • 1 cup Avocado oil (for frying)
  • 1 teaspoon Ground cinnamon

Directions

Step 1

In a mixing bowl, combine almond flour, coconut flour, xanthan gum, baking powder, and salt.

In another bowl, beat the eggs and then add the warm water, avocado oil, and sweetener.

Step 3

Gradually incorporate the wet ingredients into the dry ingredients, mixing until a dough forms.

Step 4

Knead the dough gently for 1-2 minutes until smooth, then cover with a damp towel and let it rest for 10 minutes.

Step 5

Heat 1 cup of avocado oil in a deep frying pan over medium heat until it reaches about 350°F (175°C).

While the oil is heating, dust a clean surface with a little almond flour and roll out the dough to about 1/4 inch thickness.
