Ingredients

  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 0.25 cup milk
  • 0.5 cup Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic
  • 1 medium onion
  • 1 medium carrot
  • 1 celery stalk
  • 1 pound ground lamb
  • 2 tablespoons tomato paste
  • 0.5 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves
  • 0.5 cup frozen peas

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the cauliflower into florets and steam or boil them until tender, about 10 minutes. Drain well.

Step 3

In a large bowl, combine the cooked cauliflower, butter, milk, Parmesan cheese, 0.5 teaspoon salt, and 0.25 teaspoon black pepper. Mash until smooth. Set aside.

Step 4

In a large skillet, heat the olive oil over medium heat. Add finely chopped onion, garlic, carrot, and celery; sauté until softened, about 5 minutes.

Step 5

Increase the heat to medium-high and add the ground lamb to the skillet. Cook, breaking it up with a spoon, until browned, about 6-8 minutes.

Step 6

Stir in the tomato paste, beef broth, Worcestershire sauce, fresh thyme, and remaining salt and pepper. Simmer for 5 minutes, allowing the sauce to thicken slightly.

Step 7

Stir in the frozen peas and cook for another 2 minutes.

Step 8

Transfer the lamb mixture to a 9-inch round baking dish, spreading it out evenly.

Step 9

Spoon the cauliflower mash over the lamb mixture, spreading it out evenly to cover the filling.

Step 10

Bake in the preheated oven for 20 minutes, or until the top is golden and the edges are bubbling.

Step 11

Let the shepherd’s pie cool slightly before serving. Enjoy your low-carb classic shepherd's pie!
