Ingredients

  • 500 grams ground pork
  • 120 grams almond flour
  • 50 grams grated Parmesan cheese
  • 1 large egg
  • 50 grams unsweetened Greek yogurt
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 large egg yolk
  • 1 tablespoon water

Directions

Step 1

Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the ground pork, 1 teaspoon of salt, 0.5 teaspoon of black pepper, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, and 1 teaspoon of dried thyme. Mix thoroughly until the seasonings are evenly distributed throughout the pork. Set aside.

Step 3

In another bowl, mix together the almond flour, grated Parmesan cheese, baking powder, and 1 teaspoon of salt.

Step 4

Add the egg, unsweetened Greek yogurt, and mix until a dough is formed. The mixture may be sticky, so you can lightly wet your hands or use a spatula to handle it.

Place the dough between two pieces of parchment paper and roll it out to a rectangle about 1/4 inch thick and 30 cm by 20 cm in size.

Remove the top sheet of parchment paper and arrange the seasoned pork mixture along one of the long edges of the rectangle.

Carefully lift the edge of the parchment paper to roll the dough over the filling, creating a log shape. Press the edges to seal the dough around the meat filling.

In a small bowl, combine the egg yolk and water to create an egg wash. Brush the egg wash over the top of the sausage roll log.

Using a sharp knife, cut the log into 8 equal pieces and place them seam-side down on the prepared baking sheet.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is cooked through.

Allow the sausage rolls to cool slightly before serving.
