Ingredients

  • 4 whole Bosc pears
  • 4 cups Water
  • 0.25 cup Lemon juice
  • 0.5 cup Erythritol or another sugar substitute
  • 1 whole Cinnamon stick
  • 1 whole Vanilla bean, split and seeds scraped
  • 1 whole Star anise
  • 2 whole Cloves
  • 4 strips Orange peel

Directions

Step 1

Peel the Bosc pears, leaving the stems intact if possible. Cut a small slice from the bottom of each pear to create a flat surface for standing.

Step 2

In a medium saucepan, combine the water, lemon juice, erythritol, cinnamon stick, vanilla bean and seeds, star anise, cloves, and orange peel. Bring this mixture to a gentle simmer over medium heat.

Step 3

Once the liquid is simmering, gently submerge the peeled pears into the poaching liquid. Let them simmer slowly for about 25-30 minutes until the pears are tender but still hold their shape.

Step 4

Gently turn the pears occasionally to ensure even cooking and infusion of the poaching liquid.
