Ingredients

  • 1 cup Almond flour
  • 1.5 cups Unsweetened almond milk
  • 4 pieces Large eggs
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Baking powder
  • 1 tablespoon Butter or coconut oil (for greasing the pan)

Directions

Step 1

In a medium mixing bowl, whisk together the almond flour, salt, and baking powder until well combined.

Step 2

In a separate large bowl, beat the eggs. Add the almond milk and olive oil, whisking to blend evenly.

Step 3

Gradually add the dry ingredients to the wet ingredients, whisking continuously until you have a smooth and lump-free batter.

Step 4

Heat a non-stick skillet or crepe pan over medium-low heat and lightly grease with butter or coconut oil.

Step 5

Pour about 1/4 cup of the batter into the skillet. Tilt the pan in a circular motion so that the batter spreads evenly to form a thin layer.

Step 6

Cook for about 1-2 minutes on one side until the edges start to lift and the bottom is lightly golden. Flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side.

Step 7

Transfer the cooked crepe to a plate and cover to keep warm. Repeat the process with the remaining batter, re-greasing the pan as needed.

Step 8

Serve the panquecas warm with your choice of fillings or toppings, such as savory cheese and ham, or a sweet option like sugar-free jam or berries.
